Ingredients:

  • 1 Medium Yellow Onion, chopped
  • 500 grams frozen or shelled fresh peas
  • 1 cup (75 grams) fresh mint leaves, coarsely chopped
  • 750ml hot vegetable stock
  • 2 tsp dried mint

Method:

  1. Sweat the onion with a little stock until soft
  2. Add the hot stock or broth together with the peas and dried mint and bring to the boil (3-5 minutes).
  3. Remove from the heat and then ladle into your blender or food processor together with some of the fresh mint.
  4. Keep a tablespoon of peas and a few fresh leaves unblended for your garnish
  5. Blend for about two minutes, until smooth
  6. Garnish with the remaining fresh mint and a few peas
  7. Hey Presto! delicious pea soup in less than tem minutes with minimal preparation (and cleaning)!
