Heart Warming Roasted Red Pepper & Tomato Soup

Embrace the spirit of Valentine’s Day with this delicious soul-warming soup that captures the essence of love and comfort.

Combining colourful wholesome ingredients and bursting with flavour, our Roasted Red Pepper & Tomato is always one of the most popular soups that we have on retreat at Maison de Lunel… and it’s guaranteed warm both hearts and tummies on this special day.


  • 500g roughly chopped red peppers
  • 500g plum tomatoes
  • 1 red onion – chopped
  • 2 garlic cloves, roughly chopped
  • 1 celery stalk – chopped (optional)
  • 1 teaspoon dried thyme
  • 500ml vegetable stock
  • Fresh basil, to serve


  1. Preheat oven to 180°C.
  2. Add the chopped red peppers and tomatoes to a roasting dish and sprinkle with some dried thyme. Mix well and place in the pre-heated oven to roast for 20 to 25 minutes, until slightly browned and tender.
  3. Place the onion in a large pan and sweat with a dash of water over a low / medium heat for 10 minutes or until softened. Add the garlic gloves and cook for 2 minute.
  4. Remove the tomatoes and peppers from the oven and add to pan with the onion and garlic – add the stock and then ladle into your blender. Blend until smooth.
  5. Ladle into soup bowls and garnish with fresh basil and a sprinkling of chilli flakes if you like a little heat.
