Heart Warming Roasted Red Pepper & Tomato Soup

Combining colourful wholesome ingredients and bursting with flavour, our Roasted Red Pepper & Tomato is always one of the most popular soups that we have on retreat at Maison de Lunel… and it’s guaranteed warm both hearts and tummies on this special day.
Ingredients:
- 500g roughly chopped red peppers
- 500g plum tomatoes
- 1 red onion – chopped
- 2 garlic cloves, roughly chopped
- 1 celery stalk – chopped (optional)
- 1 teaspoon dried thyme
- 500ml vegetable stock
- Fresh basil, to serve
Method:
- Preheat oven to 180°C.
- Add the chopped red peppers and tomatoes to a roasting dish and sprinkle with some dried thyme. Mix well and place in the pre-heated oven to roast for 20 to 25 minutes, until slightly browned and tender.
- Place the onion in a large pan and sweat with a dash of water over a low / medium heat for 10 minutes or until softened. Add the garlic gloves and cook for 2 minute.
- Remove the tomatoes and peppers from the oven and add to pan with the onion and garlic – add the stock and then ladle into your blender. Blend until smooth.
- Ladle into soup bowls and garnish with fresh basil and a sprinkling of chilli flakes if you like a little heat.
